Red, White & Blue Trifles
Is there anything better than summer and everything that comes with it?! We love going to the lake, bonfires, bike rides, exploring, the ice cream truck, late nights with friends, and most of all the fireworks! These Mini Berry Cheesecake Trifles are an easy way to give a personal touch to a patriotic potluck picnic.
We pack as much fun into the summer months as possible. We are usually eating 4th of July Rice Krispies Treats or 4th of July Brownies while making those memories! I am eternally grateful to the men and women who fought for our freedom. They sacrificed their lives and time with their family for us – there are no words big enough to thank them!

What You’ll Need:
- 2 (16 oz) packages Cream Cheese, Softened
- 1 cup Powdered Sugar
- 2 tbsp Lemon Juice
- 2 tsp Vanilla
- Angel Food Cake
- Raspberries
- Blackberries
- Whip Cream

How to Make Mini Berry Cheesecake Trifles
- Set out 5 clear cups.
- In a medium size bowl, beat together 2 (16 oz) packages of softened cream cheese, 1 cup powdered sugar, 2 tbsp lemon juice, and 2 tsp vanilla. Set aside.
- Cut a small store bought angel food cake into cubes and set aside.
- Spoon cheesecake mixture into the cups, then layer with raspberries and blackberries (or strawberries and blueberries). Add a layer of cubed angel food cake and top with cheesecake mixture.
- You can top off with additional berries or whip cream and patriotic sprinkles!


Tips:
- Angel Food Cake – You can make your own Angel Food Cake if you’d like, but a store bought one saves time!
- Fruit – I use raspberries and blackberries because it saves me time from having to cut strawberries.
- Cleaning berries – I do not wash the berries. Washing the berries makes them really soft and soggy, which makes it hard to make these ahead of time.
- Make ahead – You can make these a day ahead, but make sure to keep refrigerated. Making them too far ahead will cause the cheesecake mixture to separate from the water in the fruit.
- Cups – You can use any size cup you’d like, just adjust the cheesecake portion accordingly. Smaller cups are harder to use.
