I have become really disciplined with time management over the past year, but it’s taken some major changes to get here. And truth be told, even though habits are formed it still requires choices and it’s not always easy to make the right choice.
I used to have the TV on in the background while I was working because I thought it was keeping me company. Until one day I didn’t turn it on and realized I worked more efficiently without it.
My house is pretty quiet during the day, so I swapped the noise of the TV for podcasts and webinars.
This industry is always changing and evolving. It’s always been a struggle for me to set aside time for education. There is a lifetime of it and unless you really trust the source it could end up being a complete waste of time. I found podcasts from those trusted industry leaders and have been absorbing a ton of helpful information. And the webinars I set aside to listen to another day (which never came) I am listening to while I work.
This change has been a measurably significant improvement – I am about four times more productive!
I also listen to faith based talks that a friend sends me, and along the way I discovered the Simple Truths for Life podcast by Charles Tapp. His talks are short and sweet and packed with so much inspiration.
In addition to turning off the TV, I have cut way back on doom scrolling through social media. I love to see what my friends and family are up to, but, I also follow a ton of other food bloggers. While I have learned a lot from them, I have found that I start to feel like I suck because I am measuring where I am to where they are – and that isn’t realistic. I was overdue for setting boundaries for the amount of time I spent on social media.
While going through this detox, I was listening to a talk about contentment by Charles. He said, “The job of social media is to produce a sense of perpetual discontent in us for the sole purpose of creating an abundance for them.” He went on to say, “The enemy wants to place seeds of discontent in our hearts so that we feel like what we currently possess will never be enough,” and then we start to think we will never be good enough.
Wowsa.

What You’ll Need:
- 1/2 cup Pumpkin Puree
- 4 Eggs, Whisked
- 2/3 cup Milk
- 1 tsp Vanilla
- 2 tbsp Sugar
- 1 tsp Cinnamon
- 1/4 tsp Nutmeg
- 14 Slices of Texas Toast Bread
- 1 (8 oz) Cream Cheese, Softened
- 1 cup Powdered Sugar
- 1 tbsp Milk

How to Make Stuffed Pumpkin French Toast
- Combine 1/2 cup pumpkin puree, 4 whisked eggs, 2/3 cup milk, 1 tsp vanilla extract, 2 tbsp sugar, 1 tsp cinnamon, and 1/4 tsp nutmeg in a bowl. Whisk until smooth.
- Heat pan/griddle to low-medium heat.
- Lightly spray pan with non-stick spray.
- Dunk a piece of thick-cut Texas Toast bread in the French toast mixture, covering each side. Gently shake off any excess batter in the bowl.
- Place on pan on one side until golden; flip and allow the other side to golden.
- Repeat with the rest of the bread until the loaf is gone.
- In a small bowl, beat together 1 (8 oz) softened cream cheese, 1 cup powdered sugar, and 1 tbsp milk.
- Spread desired amount of cream cheese mixture between two pieces of French toast.
- Serve immediately with syrup and whipped cream!

Tips & Substitutions:
- Bread – It’s important to use thick-cut white bread, such as Texas Toast. Thin bread soaks up the batter too quickly which will make the French toast soggy.
- Milk – You can substitute the milk for any milk, such as soy or almond milk.
- Loaf Size – The loaf you buy may not exactly have 14 slices of bread. That’s okay – just use up the loaf in proportion to the batter.
- Preparing the Pan – Be sure to lightly spray the pan with non-stick spray before you place new pieces of bread on the pan.
- Temperature – Be sure to not let the pan get too hot. If the pan gets too hot, the French toast will get too dark and won’t cook thoroughly. You want to evenly golden both sides of the bread, so low-medium heat is best.
