A delicious summer dessert featuring fresh strawberries and a scoop of vanilla ice cream!

Sweet Summer Treat
We just got back from camping on our annual 10-day summer vacation! Every year we attend the Wisconsin Conference Camp Meeting and always come home revitalized from a week spent with friends and family in God’s nature.
The event always falls during strawberry picking season. We either have to go before or after our vacation. I prefer to go after so I work quickly to catch up on everything strawberry when I get back. I tried a new recipe this time! This Strawberry Cobbler is a little different than you may be used to – it isn’t real sweet and it’s a little tangy. It’s such a fun combination, especially when you top it with a scoop of vanilla ice cream!
Strawberries are my favorite fruit! I especially love them for breakfast on my cold cereal, in my Strawberry Cheesecake Overnights Oats, in Strawberry Muffins, or a Strawberry Smoothie.

What You’ll Need:
- Sugar
- Cornstarch
- Lemon Juice
- Fresh or Frozen Strawberries
- Salted Butter
- Flour
- Baking Powder
- Heavy Cream

How to Make Strawberry Cobbler
- Preheat oven to 400 degrees. Spray a 9-inch round or square pan with non-stick spray and set aside.
- Hull and slice enough strawberries to make 3 cups and set aside.
- To make the sauce, combine 1/2 cup sugar, 2 tbsp cornstarch, and 1/4 cup lemon juice in a sauce pan. Cook on medium heat until sauce thickens. Remove from heat and stir in strawberries.
- Pour the strawberry mixture into the prepared pan.
- Cut 2 tbsp cold butter into small cubes and sprinkle over strawberries after they are in the pan.
- In a medium size bowl, combine 1 cup flour, 1 tbsp sugar, 1 1/2 tsp baking powder, and 3 tbsp softened butter (cut into cubes) until you have crumbs. Stir in 1/2 cup heavy cream.
- Sprinkle mixture over the strawberries. Sprinkle additional sugar over the dough before baking.
- Bake for 25 minutes.

Tips:
- Strawberries – You can use frozen strawberries in place of fresh.
- Spoonful of sugar – This recipe isn’t very sweet; it’s a little tangy! If you like your cobbler sweet, just add more sugar to your liking.
- Fruit – You can use any fresh or frozen fruit in this recipe, such as peaches or blackberries!
When to Go Strawberry Picking
Strawberries grow in the month of June. If you want fresh locally grown strawberries, here are a few options:
- Farmer’s Market – You can save time by buying them from your local Farmer’s Market. The best time to watch for them is early June. You only have the month of June to get fresh strawberries!
- Pre-picked – You can also save time by calling your local strawberry field and ask them if they have any pre-picked strawberries available. It’s best to do this early in the season and early in the morning just as they open for the day. This route is more expensive, but it does save time.
- Pick yourself – This is our favorite option! It’s a great experience for your family, especially the kids. They usually eat more than they pick! Here are my recommendations for successful strawberry picking:
- Call first – Sometimes they aren’t open for picking to allow the strawberries to ripen.
- Go early – Summer mornings are cooler than the days. Go as early as they open so you don’t get torched in the sun! Plus that leaves you time to clean them when you get home.
- Comfort – Dress comfortably in ‘yard work’ clothes. And if your back gets sore quickly from bending over, bring something to kneel on.
