A fun little easy to make treat that looks like gold at the end of the rainbow in the clouds!

I impulse buy the most random food things with no plan for them at all. For example, I love going to the Amish dent and bent store where they sell stuff super cheap. They had a huge bag of dehydrated mini-marshmallows. Bought them with absolutely no idea what I was going to do with them.
Fast forward to being in the checkout line at the Dollar Store and I saw fruit strips that looked like rainbows. I knew I had to have them, but again, no idea what I was going to do with them!
My husband thinks he is going to die under an avalanche of stuff every time he comes into my office, so I figured I should put a dent in it! Only to make room for more impulse buys, though! HA!
So I created these St. Patrick’s Day Cookie Cups out of my 2-Ingredient Peanut Butter Cup Cookies! It’s been a project of mine to create as many possibilities as I can out of that recipe, like 2-Ingredient Peanut Butter Cup Cookies, Gnome Cookie Cups, and Peanut Butter S’mores Cookie Cups!

What You’ll Need:
- 1 package (24 count) Ready-to-Bake Reese’s Peanut Butter Cookie Dough Squares
- 24 Mini-Reese’s Cups, Unwrapped
- 1 (16 oz) can Store Bought Vanilla Frosting
- Dehydrated Mini-Marshmallows
- Candy Rainbows
- Gold Sprinkles

How to Make St. Patrick’s Day Cookie Cups
- Preheat oven to 350 degrees. Spray a 24-count mini-muffin pan with non-stick spray and set aside.
- One at a time, roll each Ready-to-Bake Reese’s Peanut Butter Cookie Dough Square into a ball. Place into each mini-muffin spot.
- Bake for 12 minutes.
- In the meantime, unwrap 24 mini-Reese’s cups and set aside.
- Remove the pan from the oven and immediately press unwrapped Reese’s down into the center of the cookie.
- Let cool before removing from the pan.
- Spread frosting on top of each cookie. Roll the tops into dehydrated mini-marshmallows.
- Press rainbow candy into the center. Then sprinkle with gold sprinkles.

St. Patrick's Day Cookie Cups
