Pecan Pie Twice Baked Sweet Potato Recipe
I love sweet potatoes! And not just at Thanksgiving, all year round! One of my favorites is my Grandma’s Sweet Potato Casserole. These Pecan Pie Twice Baked Sweet Potatoes taste just like it!

What You’ll Need for the Sweet Potatoes:
- 4 medium Sweet Potatoes, Washed & Dried
- 2 tbsp Butter
- 3 tbsp Maple Syrup
- 1/4 tsp Salt
- 1 tsp Cinnamon
And the Streusel Topping:
- 3/4 cup Pecans, Chopped
- 1 tsp Cinnamon
- 1/4 cup Flour
- 2 tbsp Butter
- 2 tbsp Maple Syrup

How to Make Pecan Pie Twice Baked Sweet Potatoes
- Preheat oven to 425 degrees.
- Bake 4 cleaned and dry sweet potatoes for 40-55 minutes. The center should be soft. A knife inserted into the center should come out clean.
- Remove from the oven.
- Reduce heat to 350 degrees. Let the sweet potatoes cool down until you can handle them without burning your hands.
- Slice each one lengthwise through the top. Scoop out the sweet potato and transfer to a medium size bowl, making sure to leave about 1/4 inch of sweet potato in the skin to keep the potato skin stable.
- Mash the sweet potatoes in the bowl. Add in 2 tbsp butter, 3 tbsp maple syrup, 1/4 tsp salt, and 1 tsp cinnamon and mix until combined.
- Stuff the sweet potato skins with the mashed sweet potato mixture.
- Make the streusel topping by mixing together 3/4 cup chopped pecans, 1 tsp cinnamon, 1/4 cup flour, 2 tbsp butter, and 2 tbsp maple syrup in a small bowl until well combined.
- Top the potatoes evenly with the streusel mixture.
- Return to the oven for 20-30 minutes.

Streusel Topping
