Rolo Mini Cheesecakes
At the beginning of the year I did a time study and efficiency audit on myself. I was long overdue! Being self-employed takes an enormous amount of self-discipline. When I punched a clock I could slack off and still count on a paycheck. Now, it’s sink or swim.
I did an inventory of all the things I needed to improve on, in both my personal and professional life. They are so closely woven together that when one suffers, the other suffers with it. I admitted to several areas that needed improvement, but the one that stands out the most is sleep. I was so short on sleep, that I knew I needed more sleep before I could even meet with myself to do the audit!
I was so sleep deprived I couldn’t focus. My sleep deprivation became a disease that I was just coping with instead of curing, and the worst part is it was self-inflicted! My quality of life was suffering and I knew I had to do better about getting more sleep. The only way to maximize my time is to be able to think clearly, and I was constantly in a brain fog. The tentacles of exhaustion were slowing me down.
Fast forward a few weeks and I finally feel rested and wake up every morning ready to slay the day! I am back to myself after several months of procrastinating and not prioritizing sleep. Wish I would have done it sooner, but here we are, doing better now and that’s progress I am proud of.
Sleep, people. It’s the magic pill everyone is looking for, but can’t find, to cure all of their problems!
I feel like that’s reason to celebrate, so let’s party with a batch (you’ll want to double it right away) of these Mini Rolo Cheesecakes! These are so amazing, I have no words. If you love Rolo’s you’ll love these! They are absolutely delicious! You’ll probably love Rolo Pretzel Turtles, Rolo Brookie Cups, Salted Caramel Pretzel Bark, and 3-Ingredient Twix Bites, too!

What You’ll Need for the Crust:
- 1 cup Oreo Crumbs
- 2 tbsp Butter, Melted
The Cheesecake:
- 12 oz Cream Cheese, Softened
- 1/2 cup Brown Sugar
- 3 tbsp Flour
- 1/2 cup Sour Cream
- 1 1/2 tsp Vanilla
- 2 Eggs
- 3/4 cup Rolos, Chopped
And the Ganache:
- 1/2 cup Chocolate Chips
- 1 1/2 tbsp Butter
- 2 tsp Milk
- 2 tsp Corn Syrup

How to Make Mini Rolo Cheesecakes
- Preheat oven to 325 degrees. Line muffin pan with liners.
- Pulse 11-12 Oreos in a food processor to make 1 cup crumbs. Then pulse in 2 tbsp melted butter until well combined.
- Spoon 1 tbsp of the cookie mixture into each liner and press down firmly.
- Bake crusts for 5 minutes, then remove from oven and reduce heat to 300 degrees.
- In a large bowl, beat together 12 oz softened cream cheese, 1/2 cup brown sugar, and 3 tbsp flour until well combined.
- Beat in 1/2 cup sour cream and 1 1/2 tsp vanilla.
- Add in 2 eggs, one at a time, beating until just combined.
- Gently fold in 3/4 cup chopped Rolo’s.
- Fill cups to just about full.
- Bake for 13 minutes, then turn oven off and leave door closed for 10 minutes.
- Crack oven door open and allow cheesecakes to cool for 15-20 minutes. Then transfer to the refrigerator to finish cooling.
- Once they are cooled and firm, make ganache by melting together 1/2 cup chocolate chips, 1 1/2 tbsp butter, 2 tsp milk, and 2 tsp corn syrup in the microwave for 30 seconds. Stir until completely well combined and smooth.
- Divide evenly between cheesecakes and top with additional chopped Rolo’s.
