I am in the process of getting ready for an annual 10-day camping vacation. We are a few days away from leaving! I wanted to get one more post up before I left, so I needed something quick and easy.
I am on a quest to find a healthy alternative to Peanut Butter Chocolate Chip Powerful Bites for a dear friend of mine. So I started with these No Bake Peanut Butter Brownie Bites. They are packed with peanut butter, flax seed, and vegan chocolate chips – yum!
My husband sat at the counter as I made dinner last night. I love it when he sits there and talks to me, because he usually gets assigned a task to help me! HA! So, I put him to work measuring peanut butter.
It’s worth noting that the original recipe called for almond butter. I found the inspiration for these No Bake Vegan Peanut Butter Brownie Bites over at Beaming Baker.
I modified the original recipe and used peanut butter instead of almond butter because I want to find an alternative that tastes as close as possible to the unhealthy version.

Peanut Butter makes these No Bake Vegan Brownie Bites have a dense texture. So don’t be afraid to keep adding and stirring in additional maple syrup to give these bites the brownie consistency you are looking for. If you don’t add enough maple syrup, the bites will be dry and crumbly. I don’t want you to be disappointed, so don’t be afraid to keep adding 1 tbsp of maple syrup as you stir. I recommend starting with what the recipe calls for first, then keep adding maple syrup.
So, start with 1/2 cup maple syrup. If it’s too dry, add in another 1 tbsp maple syrup. If the mixture is still a little too dry, keep adding in 1 tbsp of maple syrup at a time until you like the consistency. It should be like an ooey gooey brownie!
Don’t worry, you won’t ruin these! They will just be really fudgy if you add too much maple syrup. I don’t know about you, but I love fudgy brownies!
Something else to note, I don’t always use the flax seed called for in this recipe. That’s the beauty of baking – start with what the recipe calls for and the next time you make it, tweak it to your liking!

My hubby loves peanut butter and I love chocolate. We have plans to keep these stocked for a healthier snack to have while we binge watch Parenthood on Netflix!

No Bake Vegan Peanut Butter Brownie Bites

No Bake Vegan Peanut Butter Brownie Bites, a delicious guilt-free healthy alternative that’s packed with flax seed and quick and easy to make!
Ingredients
- 3/4 cup Flour
- 3/4 cup Unsweetened Cocoa Powder
- 2 tbsp Ground Flaxseed
- 1/2 cup Vegan Chocolate Chips (Mini and/or Regular Size)
- 3/4 cup Creamy Peanut Butter
- 1/2 cup Maple Syrup
- 1 tsp Vanilla Extract
Instructions
- Mix together all of the dry ingredients.
- Add in peanut butter, maple syrup, and vanilla. Stir and fold together until well mixed. NOTE: You may find the mixture is still dry (crumbly) at this point. Start with 1/2 cup maple syrup. If it's too dry, add in 1 tbsp. If the mixture is still a little too dry, keep adding in 1 tbsp of maple syrup at a time until you like the consistency.
- Use a 1-inch scoop and form into balls. You can use additional chocolate chips to press into the outside of the bites.
