Easy Cake Batter Popcorn
My niece, Leah, has a very special place in my heart. She is all the best parts of my sister.
She is unapologetic, a friend to everyone, a leader, tender hearted, forgiving, fierce, creative, and brave. She loves all things glamourous, glitter, and bedazzled and rocks her high-top pink tennis shoes with a skirt and clip-in bright colored braids!
I want to be just like her when I grow up.
Every chance Leah gets she advertises my blog! She shows her friends, family, and babysitters. It’s adorable! She jumped up and down with so much glee and excitement when she told me she is going to work for me someday! She always leads with telling because asking could lead to undesired results, ha! I told her I will hold a place for her as my Advertising Manager. She doesn’t know it yet, but I am having a special shirt made for her with her new title on it.
In the meantime, I am sending her this batch of Birthday Cake Popcorn. The birthday section of the blog is her favorite and it doesn’t have much for recipes in that section, so I am going to be intentional about adding more just for her!

What You’ll Need:
- 6 cups Popcorn
- 24 oz Almond Bark
- 1 cup Funfetti Cake Mix
- Sprinkles

How to Make Birthday Cake Popcorn
- Lay parchment paper on the counter.
- Place 6 cups popcorn in a large bowl.
- Melt 24 oz almond bark in the microwave in 30 second intervals, stirring between each interval, until smooth and melted. Stir 1 cup funfetti cake mix into the melted almond bark until well combined.
- Pour almond bark mixture over the popcorn and mix well.
- Spread onto the parchment paper in a thin layer and in small clumps. Sprinkle with sprinkles, then let harden.
