Mexican Street Corn Dip Recipe
It doesn’t matter how bad of an experience I’ve had, I will never leave a bad review. I would be absolutely mortified if someone gave me a bad review, I am certainly not about to do that to someone else. Even if their service or product justified it.
And even if people have left bad reviews, I don’t take them into consideration. I want to draw my own conclusion! It doesn’t matter what it is, a movie, restaurant, a product on Amazon, a recipe… I am not going to let someone’s negativity sway me!

What You’ll Need:
- 2 tbsp Butter
- 4 cups Corn Kernels
- 1/2 cup Mayonnaise
- 3 tbsp Sour Cream
- Juice of Half a Lime
- 1 tsp Garlic Powder
- 1/4 tsp Cayenne Pepper
- 2/3 cup Cotija Cheese, Crumbled
- Fresh Cilantro, Minced
How to Make Mexican Street Corn Dip
- Melt 2 tbsp butter in a large skillet over medium heat.
- Add 4 cups corn kernels and sauté for 8-10 minutes until the kernels begin to slightly brown and caramelize.
- Remove from heat and let cool for 10 minutes.
- Stir in the 1/2 cup mayonnaise, 3 tbsp sour cream, juice of half a lime, 1 tsp garlic powder, and 1/4 tsp cayenne pepper until well combined.
- Set aside 2 tbsp crumbled cotija cheese and mix the rest into the corn mixture.
- When ready to serve, sprinkle the reserved crumbled cheese and minced fresh cilantro on top.
