Andes Mint Ritz Cookie Recipe
My Mom told me about this genius idea. Someone she works with brought them in to share with everyone. She told me how easy they were to make and that they taste just like Girl Scout Thin Mint Cookies. I just could not understand how that was possible, because they are made with Ritz crackers!
Sure enough, they do in fact taste exactly like Thin Mints!
I like super easy to make treats for the holidays. Not only does it have to be easy, I need to be able to make as small or big batches as I need so it can stretch across the many people I like to gift Christmas treats to every year. And, of course they have to be delicious!
I’m telling you – these Andes Mint Ritz Cookies check all the boxes! All you have to do is melt Andes mints and dunk the crackers into them. You can make as many as you’d like pretty quickly!

What You’ll Need:
- 1 (4.6 oz) box Andes Mints
- 16 Ritz Crackers
- Christmas Sprinkles
How to Make Andes Mint Ritz Cookies
- Unwrap 1 (4.6 oz) box Andes Mints and put them in a bowl.
- Place a piece of parchment paper on the counter.
- Microwave in 30 second intervals, stirring between each interval until smooth and melted.
- Dip a Ritz cracker into the melted mints so it’s completely covered. Using a fork, remove the cracker from the bowl and tap off excess melted mints on the side of the bowl.
- Transfer to the parchment paper.
- Sprinkle tops with Christmas sprinkles right away. (The melted mints harden quickly.)
- Let harden.
