No Bake Monster Cookie Energy Bites
My son asked if he could do something and I told him ‘no.’ He was disappointed and walked away and found something else to do. A short while later he came back begging me to do what I just told him he couldn’t do. At the same time he started kissing me all over my cheek and giving me big hugs. I was shocked because it was completely out of character for him! I couldn’t stop laughing and of course caved in and he got what he wanted.
Terrible parenting!
So I asked him what gave him that idea and his response was… he sees me do that to my husband when I want something! What have I done?! I’m supposed to be able to blame all of our parenting shortcomings on my husband, but so far most of them can be blamed on me!
Excuse me while I sit here and wonder how I can undo all of the damage I have done…
In the meantime, it’s nothing a batch of these Monster Cookie Energy Balls can’t fix! If you love these as much as my son does, you’ll like Chocolate Chip Energy Balls, Chia Seed Energy Balls, and S’mores Energy Bites, too!
What You’ll Need:
- 2 1/2 cups Quick Oats
- 1 cup Peanut Butter, Creamy
- 1/2 cup Honey
- 1 tsp Vanilla
- 1/2 cup Mini-Chocolate Chips
- 1/2 cup Mini-M&M’s
How to Make Monster Cookie Energy Balls
- Add 2 1/2 cups quick oats, 1 cup creamy peanut butter, 1/2 cup honey, 1 tsp vanilla, 1/2 cup mini-chocolate chips, and 1/2 cup mini-M&M’s to a mixing bowl and combine together with a hand mixer.
- Make 1″ size balls by firmly squeezing into a ball with the palm of your hand and then gently form into a ball.
Recipe Notes:
- Storing – Store in a sealed container and in the refrigerator so they don’t get dry and keep their form.
- Peanut Butter – DO NOT use natural peanut butter, you will not get the results pictured. However, you can use regular creamy or crunchy.
- Mini-Chocolate Chips and M&M’s – You will likely have extra of both in the bottom of the bowl. I just dab them up right before I roll into balls.
- Taste – These taste great at room temperature or cold!
