Better Than Panera Broccoli Cheddar Soup
I was recently working on a massive project that is due this weekend. I clicked ‘save’ as I was making updates to it and got an error message. I cleared the message, my screens went black, and it was gone. I lost about 90% of my project.
I was so mad. I desperately searched Google for ways I could recover it. Nothing worked. As I sat there I thought, “I could sit here and keep wasting time being mad about it or I can get to work on recreating it.”
So I started all over. I wasn’t happy about it. It’s finally done and I am praying it will bless those who will be receiving it.
My Grandma always expects the unexpected. She is always prepared for what she doesn’t know is coming! I can’t say the same. For that reason, I like to have easy recipes on hand like this Broccoli Cheddar Soup! It would go perfectly with Easy Focaccia Bread, The Best Cornbread, or my Grandma’s Homemade Oatmeal Bread! Or, you can serve it in a bread bowl!
What You’ll Need:
- 4 tbsp Butter
- 1/2 medium Onion, Diced
- 2-3 cloves Garlic, Minced
- 4 tbsp Flour
- 2 cups Vegetable Stock
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 1/4 tsp Paprika
- 3 cups Broccoli Florets
- 1 large Carrot, Finely Grated
- 2 cups Heavy Cream
- 2 cups Cheddar Cheese, Shredded
How to Make Broccoli Cheddar Soup
- Melt 4 tbsp butter in a large pot over medium heat. Add 1/2 diced onion and cook for 3-4 minutes or until the onions are translucent. Add 2-3 cloves minced garlic and sauté for another minute.
- Add in 4 tbsp flour and whisk for 1-2 minutes or until the flour starts to turn golden brown. Pour in 2 cups vegetable stock, 1tsp salt, 1/2 tsp black pepper, 1/4 tsp paprika, 3 cups broccoli florets, and 1 large finely grated carrot.
- Bring to a boil then simmer for 15 minutes, or until the broccoli and carrots are cooked through.
- Stir in heavy cream and 2 cups shredded cheddar cheese until cheese is melted. Taste and adjust seasoning if needed.
