Ingredients You’ll Need:
- 3 1/4 cups Flour
- 1 tsp Salt
- 1 tsp Baking Soda
- 1 cup Butter, Softened
- 1 cup Brown Sugar
- 3/4 cup Sugar
- 2 Eggs
- 1 tbsp Vanilla
- 1 cup Chocolate Chips
- 1 (9 oz) bag Cadbury Mini Eggs
How to Make Cadbury Egg Cookies
- Preheat oven to 350 degrees. Line a cookie sheet with parchment paper and set aside.
- Place the Cadbury Mini Eggs inside a Ziploc bag. Using a rolling pin, break the candies into smaller pieces. Keep some pieces larger by only breaking in half. Set aside.
- In medium size bowl, whisk together 3 1/4 cups flour, 1 tsp salt, and 1 tsp baking soda. Set aside.
- In a large bowl, beat together 1 cup softened butter, 1 cup brown sugar, and 3/4 cup sugar until fluffy and creamy. Beat in 2 eggs and 1 tbsp vanilla.
- Beat the dry ingredients into the wet until cookie dough forms. Fold in 1 cup chocolate chips and all but 1/2 cup crushed Cadbury Mini Eggs. Mix gently until just combined.
- Place 1 1/2 tbsp size scoops of cookie dough on the prepared baking sheet, leaving room between the cookies to spread.
- Bake for 10 minutes.
- Press in additional chocolate chips and crushed Cadbury Mini Eggs into the tops of the cookies right after removing from the oven.
