The last time I made these Mint Chocolate Chip Cookies and gave one to my husband to try he said, “These are amazing! I could eat 12 of them with a big glass of milk!” You know, he didn’t check the cookie for imperfections first. He just ate it and loved it!

Ingredients You’ll Need:
- 1 2/3 cups Flour
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 1/2 cup Butter, Softened
- 1/2 cup Brown Sugar
- 1/4 cup Sugar
- 1 Egg
- 1/2 tsp Peppermint Extract
- 1/2 cup Chocolate Chips
- 1/2 cup Mint Chips
- 1/2 cup Andes Baking Chips
How to Make Mint Chocolate Chip Cookies
- Preheat oven to 350 degrees. Line a cookie sheet with parchment paper.
- In a small bowl, whisk together 1 2/3 cups flour, 1/2 tsp baking soda, and 1/4 tsp salt. Set aside.
- In a large bowl, beat together 1/2 cup softened butter, 1/2 cup brown sugar, and 1/4 cup sugar until fluffy. Add in 1 egg and 1/2 tsp peppermint extract.
- Gradually beat in the flour mixture until well combined.
- Fold in 1/2 cup chocolate chips, 1/2 cup mint chips, and 1/2 cup Andes Baking Chips until just combined.
- Place heaping 1 1/2 tbsp size scoops of cookie dough on the prepared baking sheet, leaving room between the cookies to spread.
- Bake for 9-11 minutes, until the edges are just beginning to turn golden brown and the center is still slightly underdone.
- Press in additional chocolate chips, mint chips, and Andes baking chips into the tops of the cookies right after removing from the oven.
