No Bake Chia Seed Energy Balls!
Our church is great about scheduling social events. They have regular Pickleball game nights and we just love going! We get to spend time with friends, share snacks, and have fun while getting in some exercise! I recently made a double batch of these Chia Seed Energy Balls to share with everyone at one of the games, but I should have waited until the last minute to make them because they are so addicting!
They sat on my counter and tempted me for two days! It is just way to easy to eat too many of these, I just can’t stop eating them! The peanut butter pairs so perfectly with all of the ingredients, they are just so irresistible and too good not to share with you!
Why this Recipe Works:
- No Baking Required – These energy balls come together in minutes using simple pantry ingredients, making them perfect for busy schedules and easy meal prep.
- Packed with Staying Power – The combination of oats, peanut butter, and chia seeds creates a satisfying snack that helps keep you feeling full between meals.
- Meal Prep Friendly – They store well in the refrigerator and freezer, making them an ideal make ahead snack for the week.
- Family Approved Flavor – The peanut butter and chocolate chip combination makes these healthy snack bites taste more like a treat than a typical energy ball.
Ingredients You’ll Need:
- 2 cups Quick Oats – Provides structure, fiber, and a chewy texture that makes these energy balls satisfying and filling.
- 1 cup Shredded Coconut – Adds natural sweetness, texture, and a subtle tropical flavor.
- 3/4 cup Chia Seeds – Pack these bites with fiber, protein, and omega-3 fatty acids while adding a slight crunch.
- 1 cup Chocolate Chips – Brings a touch of sweetness and makes these energy balls feel like a treat.
- 1/2 cup Honey – Acts as a natural sweetener and helps bind the ingredients together.
- 3/4 cup Peanut Butter – Adds protein, healthy fats, and a rich, nutty flavor while helping hold the mixture together.
- 1/2 tsp Vanilla – Enhances the overall flavor and adds warmth and sweetness.
How to Make Chia Seed Energy Balls
- Preheat oven to 350 degrees. Line baking sheet with parchment paper and set aside.
- Combine 2 cups quick oats, 1 cup shredded coconut, 3/4 cup chia seeds, 1 cup chocolate chips, 1/2 cup honey, 3/4 cup peanut butter, and 1/2 tsp vanilla and mix together well.
- Scoop and roll into 2 tbsp size balls and place onto prepared baking sheet.
- Bake for 6 minutes, then rotate pan. Bake for additional 6 minutes and remove from the oven.
- Allow them to completely cool before removing from the pan and storing.
My Best Tips:
- Measure the Chia Seeds Carefully – Chia seeds absorb moisture as they sit. Too many can make the mixture overly dry and crumbly.
- Use a Cookie Scoop – A 1 1/2 tbsp size cookie scoop helps create evenly sized energy balls that look nice and store neatly.
- Wet Your Hands Slightly – A little water on your hands helps prevent the mixture from sticking while rolling.
- Store for Grab and Go Snacking – Keep them in an airtight container in the refrigerator for up to a week, or freeze them in a freezer safe bag for up to 3 months for longer storage.
- Nut Butter Substitute – You can swap the peanut butter for almond or cashew butter for a different flavor profile.
