A healthy vegan dish that compliments any meal. These crispy golden tofu croquettes are easy to make and work great as a freezer meal, too!

For years we have used paper plates to cut down on dishes… and well, let’s face it. Disposable is easier! A few weeks ago we ran out of paper plates, which was unusual because we are always stocked with them. So I used real plates. The strangest thing happened! I actually put more effort into the meal when I used ‘real’ plates! They aren’t anything fancy, they are cheapy’s from Walmart.
I felt like I cared more about the meal, like I wanted to ‘plate’ the food. It was the craziest thing! How in the world did using ‘real’ plates have any influence in my food preparation efforts?! Then I remembered when I discovered using a straw in my cup actually encourages me to drink more water! And it wasn’t just a thing in the moment, I’ve been drinking a lot more water throughout the day for years now all because of a silly straw!
The point is… keep trying new ways of doing things!

What You Need for Tofu Croquettes
- Extra Firm Water Pack Tofu
- Baked Potato
- Onion
- Italian Bread Crumbs
- Chopped Walnuts
- Oil
- Dried Parsley
- Onion Powder
- Yeast Flakes
- Marjoram
- Oregano
- Salt

How to Make Tofu Croquettes
- Preheat the oven to 350 degrees.
- In a large bowl, combine the following: 14 oz extra firm water pack tofu, 1 large (cold) peeled, grated baked potato, 1/2 onion chopped fine, 3/4 cup Italian style bread crumbs, 1/4 cup finely chopped walnuts, and 2 tbsp oil.
- Next, add in the following: 1 tbsp dried parsley, 1/2 tsp onion powder, 1 1/2 tsp yeast flakes, 1/2 tsp marjoram, 1/2 tsp oregano, and 1 tsp salt.
- Spray baking sheet with non-stick spray. Form into balls and pack firm. Place on the prepared baking sheet and bake for 25-30 minutes or until golden brown. Turn them over half way through baking. When done, leave on the baking sheet to cool.

Tips for Making Tofu Croquettes
- Bake the potato and put in the refrigerator ahead of time.
- The croquettes will get firmer as they cool on the baking sheet.
- You can eat as is or dunk in favorite dipping sauce or cover with gravy.

- 14 oz Extra Firm Water Pack Tofu
- 1 large (Cold) Peeled, Grated Baked Potato
- 1/2 Onion, Chopped Fine
